As winemakers, we enjoy being out and about in the region – visiting restaurants that are close to our hearts. This time, our journey took us to Raron, to Kapitel 7 – one of the few establishments in Valais’ fine dining scene that is also open at lunchtime. Which is by no means a given.
Amedee Mathier was there for lunch with business partners – and was not disappointed. What Rainer Willisch and Simone Witschard have created in recent years from the former Rarnerhof is remarkable: several restaurant and bistro areas, elaborately designed vaulted cellars for events and wine tastings, a garden park, and new suites currently under construction.
Rainer Willisch, once trained at the Mont Cervin Palace in Zermatt, brings a great sense of finesse to the kitchen – a talent that GaultMillau Switzerland recognized with 14 points on its first visit.
Water buffalo tartare, lobster bisque, butter-tender veal fillet – the cuisine impresses with precision, creativity, and top-quality ingredients. Accompanied by a refined wine list with strong Valais crus. And at the table: the attentive, warm service of Simone Witschard.
